Some people make chocolate salami with condensed milk, but, as for me, it’s too sweet, so I make it according to my dad’s old recipe with a mixture similar to “4 spoons frosting”: cocoa, sugar, milk, and butter.
Delicious chocolate salami – what’s the secret?
The most important ingredient in chocolate salami is cocoa. A lot depends on its quality, and that is why salami often does not turn out to be as rich in flavor and color as we would like.
Please don’t skimp on the cocoa for the chocolate salami. The recipe calls for only 20 grams of it, but it will determine the balance of flavor: whether there will be bitterness and how rich the chocolate flavor of the chocolate salami will be. I recommend using this organic cocoa powder.
By the way, the appetizing color of the sweet salami also depends on cocoa, so don’t even look at the gray strange powders.
Ingredients for the chocolate salami:
shortbread cookies
nuts (walnuts, almonds, cashews or peanuts)
cocoa powder
sugar
milk
butter
How to make chocolate salami:
- Cut the biscuits with a knife on a board. You do not need to grind them into flour, small pieces are enough.
- Chop the nuts. Mix the cookies and nuts in a bowl.
- Combine the cocoa and sugar in a saucepan and mix well. Pour in the milk and mix well again. You will get a chocolate paste. Add the butter and put the saucepan on low heat. Stirring, bring the mixture to a boil and remove from heat. Let it cool to room temperature.
- Pour the chocolate mixture over the cookies with nuts and mix well. The mixture should be quite thick.
- Put half of the mixture on plastic wrap and wrap it around to form a salami. Do the same with the other half of the mixture.
- Put both pieces in the refrigerator. Chill for 4-5 hours or overnight.
- To serve, cut the chocolate salami into 1.5-2 cm thick slices.
If you want to make vegan chocolate salami, you can replace some products: cookies with vegan cookies; butter with coconut oil; milk with the plant milk you like. Sugar can be replaced with honey or other sweeteners. In general, there is a lot of freedom here.
