Until recently, I was at a complete loss as to why all of Pinterest and half of Instagram were full of this banana bread. It’s just a banana, what can you expect from it? And in general, what can you expect from banana pastries? Nothing interesting. But “I have to try making that banana bread,” I thought, finding some overripe bananas in the fridge, and it was definitely the best decision. So, here is definitely the best one bowl banana bread recipe.
It seems that the whole world is now making banana bread, and social media gives the impression that even the laziest people on Earth have already managed to bake it.
The question “what’s so special about it?” disappears around the 10th minute of cooking, when you’re already putting the bread into the oven. And it’s completely forgotten when you try the first bite.
Here on the blog, I publish only those recipes that have passed my personal scrupulous selection in terms of effort and result, but this banana bread seems to have outperformed if not all my recipes, then half of them for sure.
Try making banana bread, and from that moment you will always have only one answer to the question “what to make with overripe bananas?”

In addition to the banana bread itself, I also encourage you to make a toasted banana bread. It is incredibly tasty and, in my opinion, looks like a dessert from a fancy restaurant menu. Just imagine the reaction of your loved ones when you make banana bread toast with yogurt and berries for breakfast!
Banana bread is usually baked in a loaf pan that looks like a brick. Of course, you can make it in any shape, even as small muffins (in this case the baking time will be a little shorter). All you need is a bowl and a fork to mash the bananas.
The more ripe the bananas, the better. You can even use completely brown ones. But green or unripe bananas are definitely not an option, because you won’t be able to make mashed bananas from them.
This recipe gives the amount of ingredients for 1 banana bread for a 10×25 cm baking pan.
Ingredients:
butter
medium bananas
eggs
sugar
vanilla extract (I recommend this one)
salt
ground cinnamon (I recommend this one, very flavorful)
all-purpose flour
baking powder
- Turn on the oven to preheat to 180ºC.
- Melt the butter.
- Peel the bananas and mash them with a fork to a puree (leave 1 whole banana for garnishing).
- Add the eggs, sugar, vanilla extract, cinnamon, salt and melted butter to the bananas. Mix well.
- Sift the flour and baking powder into the banana mixture. Stir until smooth.
- Cover the baking dish with parchment. Pour the dough into the baking dish.
- Peel the whole banana and cut it in half lengthwise. Place on top of the dough in the baking dish. Do not press them into the dough, as they will sink.
- Bake the banana bread for about 1 hour at 180°C. Starting at the 50-minute mark, check for doneness with a wooden skewer; it should come out dry and clean when the banana bread is done.
- Carefully remove the hot banana bread from the baking dish and cool it on a wire rack or wooden board.
Serve banana bread plain or with butter, peanut butter or chocolate paste, or whatever else you want, it will still be delicious.
Or… make a banana bread toast. It’s very simple and quick.
Fry a slice of banana bread in butter in a preheated frying pan. Fry for 1–2 minutes to get a crispy crust. Put it on a nice plate and top the toast with yogurt, sour cream, or even ice cream (it’ll be a wow) and add berries or sliced fruit.
