Strawberry galette recipe will surprise you: it is a very tasty and simple cake that can be prepared quickly and without even waiting for it to cool. Agree, an ideal option for unexpected guests.
What makes a galette easier and more handy than our usual pies? Firstly, it doesn’t require any mold to bake it; the dough is rolled out and shaped on parchment or a baking mat. Secondly, the galette doesn’t require any filling, it’s just berries on the dough. All in all, a minimum of movements for a great result.
The galette is based on ordinary shortcrust pastry, which can even be prepared in advance, it is perfectly stored in the cold for several days and in the frost for several weeks.
If you have almond flour, replace 40 g of wheat flour with the same amount of almond flour, and the cake will be even more tender.
If you are using frozen berries, defrost them beforehand and drain off any excess water.
If you are using fresh berries, wash and dry them with a paper towel.
Ingredients:
200 g all-purpose flour
100 g cold butter
a pinch of salt
40 g sugar
1 egg yolk
2-3 tbsp of cold water
20-30 g almond flour or cornstarch
200-300 g strawberries
sugar for sprinkling
almond petals and mint leaves
- Cut the cold butter with flour, salt and sugar into crumbs (you can use a knife, but it is faster and easier to use a food processor).
- Add the egg yolk and then, while mixing in the processor, add cold water 1 tbsp at a time until the dough begins to form a ball.
- Wrap the dough in plastic wrap and press it down a little to make it flatter. Put in the fridge for half an hour.
- Turn on the oven to preheat to 180°C.
- Roll out the dough into a round layer about 3 mm thick. Sprinkle with almond flour (it tastes better) or cornstarch and put the prepared strawberries on top, leaving 4-5 cm from the edges of the dough.
- Sprinkle the strawberries lightly with sugar. Fold the edges of the dough over the berries. Sprinkle the future galette with almond flakes.
- Bake in an oven preheated to 180°C for about 30 minutes. When the galette turns golden, it’s ready!
Garnish the strawberry galette with mint leaves and eat it warm or chilled.
