A simple, very juicy and homey cherry phyllo pie. It’s easy and quick to make, using ready-made dough, frozen cherries and a few other ingredients that you almost always have at home.

Phyllo is a very thin pastry, that is neutral in flavor, neither salty nor sweet, so it is suitable for pies with any filling. Famous dishes with phyllo dough that you’ve probably heard of include baklava and strudel.

You can make phyllo at home, or you can buy it ready-made in the supermarket, and it’s not uncommon nowadays. Soon, we will have a detailed recipe for phyllo on the blog, but for now, let’s make a pie from ready-made dough as an option for the busy and/or lazy ones.

Phyllo pastry has one feature – it dries very quickly in the open air, which makes it very fragile and brittle. Do not leave the pastry open for more than a few minutes, and close the open package with the pastry tightly.

The following amount of products will make a cake with a diameter of about 24-26 cm.

Ingredients:

5–6 sheets of phyllo dough
400 g pitted cherries (fresh or frozen)
100 g butter
3 eggs
100 g sugar
150 g light cream (15-20% fat)
almond flakes

  1. Defrost the dough and cherries. Put the cherries in a sieve to drain off the excess liquid.
  2. Melt the butter.
  3. Turn on the oven to preheat to 180°C. Cover the bottom of a round baking dish with parchment.
  4. Lightly grease one sheet of dough with melted butter, put a row of cherries along the long edge, roll it up and place it in the baking dish along the wall.
  5. Repeat with each sheet, and put the rolls in the baking dish one by one in a spiral.
  6. Brush “the snail” with the remaining melted butter and put it in a preheated 180°C oven for 20 minutes.
  7. At this time, beat the eggs with sugar a little, add cream and mix with a whisk.
  8. Pour the creamy egg mixture over the hot snail, sprinkle with almond flakes, and bake for another 20 minutes until golden brown.

Serve hot and enjoy immediately. The crust is crispy, and the pie is so juicy inside!
