Two facts about homemade pasta: it’s very tasty and it’s very simple. Easier than pizza or dumplings, for example, both in terms of ingredients and in the process. The egg noodle dough recipe includes only three ingredients, and the process itself is very simple.
Pasta as a type of dough is very popular in many cuisines around the world. You can prepare numerous dishes using the same base – homemade egg pasta, and depending on how you serve it, you can virtually travel to different corners of the world, from South America to Asia.
Homemade egg pasta tastes great with various sauces, such as bechamel sauce, pesto, or even just with cream. And of course, soup with homemade pasta is a special love.
Today, I have a quick egg noodle dough recipe for you. Writing it took more time than cooking pasta, so don’t be intimidated by the long text.
There are various ways to make homemade egg noodle dough, but the basic ingredients always remain the same: flour, eggs and salt.
Flour for homemade egg pasta recipe
Most often, high-grade all-purpose wheat flour is used to make homemade pasta. You’ve probably also come across special flour for making pasta or noodles in stores, which usually contains less protein and may be made from durum wheat. This flour is great for making homemade egg noodle dough, but you can start with regular flour and then try other types.
Eggs
Eggs give the pasta flavor and color. The brighter the yolk of the egg, the more yellow the homemade pasta will be. Depending on the size of the eggs, you can adjust the amount of flour (you may need slightly more or less than indicated in the recipe).
Salt
Salt is an essential ingredient in homemade egg noodle dough, as it gives it a brighter flavor. Add a little salt to the dough, but don’t forget to salt the water in which the homemade pasta will be cooked.
So, here’s the egg noodle dough recipe
From the specified amount of ingredients, you will get 5–6 servings of pasta.

- Sift the flour onto the table, add salt, mix with your hands, and make a well in the middle.
- Break the eggs into that well, mix them together with a fork, gradually picking up the flour from the sides to the eggs.
- When it becomes difficult to mix with a fork, knead the dough with your hands until smooth. The egg noodle dough is easy to knead, it does not stick to your hands or the table.
- Next, divide the dough into 2 parts and roll each one in turn on a table sprinkled with flour into a very thin rectangle. The dough should be slightly translucent.
- Let the dough sit for 5 minutes, sprinkle with flour, and roll it into a roll.
- Cut across into thin slices – this width will result in future pasta. Then unroll the slices. If desired, you can twist the pasta like tagliatelle.
- Bring the water to a boil, add salt, and cook the pasta for just 2–3 minutes. Done!
Next, add whatever you like to the pasta. For me, it’s Parmesan, lemon zest and parsley.
You can cook some of the pasta, cover the rest with plastic wrap, and store it in the refrigerator (for up to 3 days) or in the freezer (for up to 2 months).
How to cook homemade pasta with sauce?
If you plan to serve homemade pasta with sauce, pay attention to a few points:
- cook the homemade pasta in water for just 1–2 minutes, until al dente, i.e., undercooked pasta
- meanwhile, bring the sauce to a boil in a separate saucepan
- transfer the homemade pasta from the boiling water to the boiling sauce and cook them together for 1–2 minutes.
Prepared in this way, homemade pasta will absorb the sauce and it will taste incredible.
