This type of cottage cheese cookies is very popular in Ukraine, and it has many different names: cheese triangles, corners, envelopes, books, handkerchiefs, cheesy ears, kisses, goose feet, hearts, shells, roses – that’s where your imagination can run wild! Whatever they are called, almost every Ukrainian family remembers and loves their favorite cottage cheese cookies from childhood.
The recipe for cottage cheese cookies is very simple! It has been tested and worked out by our grandmothers and mothers.
Why you will love cottage cheese cookies as much as I do? For its simplicity, crispy crust, tender center, simple ingredients, and also for its speed of preparation and the fact that even children can handle it (they love to roll and twist that cookies).
Ingredients:
- cottage cheese
- unsalted butter
- all-purpose flour (you may need a little more)
- baking powder
- sugar
- vanilla sugar
Turn on the oven to preheat to 180°C (356°F).
Punch the cottage cheese in a food processor to make it more homogeneous.
Combine room temperature cottage cheese with softened butter and mix.
Add flour and baking powder and knead the dough. Add a little more flour if necessary. The finished dough should not stick to your hands.
Mix the sugar with the vanilla sugar in a separate bowl.
Roll out the dough into a layer about 0.5 cm thick and cut out circles with a glass.
Put one circle on the sugar with one side, fold it in half with the sugar side in, put the half on the sugar, fold it in half again with the sugar side in, and put the quarter again with one side in the sugar.
Place the cookies on a baking sheet covered with parchment, sugar side up. Repeat with all the circles.
Bake at 180°C (356°F) until golden brown (about 15–20 minutes).
The main thing is not to overcook! Ideally, the cookies should be crispy outside and tender inside.
