How to Bake Carrot Cake Layers
I recommend dividing the batter between three 6–7-inch (16–18 cm) cake pans instead of baking it as one tall cake.
The thinner layers bake in about 20–25 minutes, so they cook more evenly and don’t require a long baking time. You also don’t have to cut one large cake into layers afterward.
If you don’t have three cake pans of the same size, you can bake the layers one at a time. You can also make additional small pans from aluminum foil if needed.
If you prefer to bake the entire batter in one pan, keep in mind that a deep cake will take considerably longer to bake — around an hour or more depending on the size and depth of the pan.
Cream Cheese Frosting

- a pinch of salt
- 200 g (1⅔ cups) all-purpose flour
- 1 tsp baking powder
- 100 g (¾ cup) chopped nuts or a mixture of nuts
- 200 g (about 2 medium) carrots
- For the cream cheese frosting:
- 500 g (17.6 oz) full-fat cream cheese, chilled
- 100 g (about ½ cup) heavy whipping cream, chilled
- 70 g (½ cup + 2 tbsp) powdered sugar
Instructions
Cake layers
Preheat the oven to 180°C (350°F). Line three 6–7-inch (16–18 cm) cake pans with parchment paper. Do not grease the sides.
Whisk the eggs and sugar until well combined. There is no need to whip them until fluffy.
Add the oil, vanilla extract and orange zest. Mix until combined.
Add the cinnamon, nutmeg, salt, flour and baking powder. Mix just until combined.
Finely chop the nuts and add them to the batter.
Peel and finely grate the carrots. There is no need to squeeze out the juice. Add the carrots to the batter and mix until evenly distributed.
Divide the batter evenly between the three prepared pans.
Bake for about 20–25 minutes, or until a wooden skewer inserted into the center comes out clean. Baking time may vary depending on your oven.
Remove the cake layers from the oven and let them cool completely in the pans.
Cream Cheese Frosting
Drain any excess liquid from the cream cheese.
Place the cold heavy whipping cream and cold cream cheese in a mixing bowl. Sift in the powdered sugar.
Beat with a mixer until smooth and creamy, about 5 minutes.
Assembling the Cake
Place the first cake layer on a cake board or serving plate and spread an even layer of cream cheese frosting over it. Repeat with the second layer, then place the third layer on top.
Cover the entire cake with a thin layer of frosting to create a crumb coat. Chill the cake if needed, then cover it with the remaining frosting and smooth the top and sides.
