Pampukhy (or gently “pampushky”) are an ancient Ukrainian pastry made from yeast dough, lean or not. They can be either savory or sweet, baked in the oven or fried in oil. So, it’s a very versatile pastry. But today I’m sharing with you my favorite vegan garlic pampushky recipe. They can also be called garlic bread, garlic buns or garlic dinner rolls. Their smell, taste, and when served with borscht and green onions… The most delicious home-cooked food in the world!
The garlic pampushky recipe uses very simple ingredients that everyone usually has at home. Vegan garlic dinner rolls do not contain any animal products such as eggs, milk, or butter, and can therefore be safely prepared during fasting or if someone is allergic to the above ingredients.
The whole cooking process takes about 3 hours. During this time, you can make borscht in time 🙂
All products should be at room temperature. There is no need to heat anything, it is only advisable to keep the dough away from drafts so that it rises well.

Vegan dough for garlic pampushky
water
dry or fresh yeast
salt
sugar
odorless oil
all-purpose flour
Garlic sauce for pampushky
garlic
fresh dill or parsley
salt
odorless oil (sunflower oil works best)
Mix the water with the yeast, add salt, sugar, and oil. Mix everything together with a whisk.
Add the flour and knead the dough. You don’t have to knead it for a long time; a few minutes is enough to ensure that all the ingredients are well combined, and the dough is smooth.
Put the dough in a bowl of a size that is enough for the dough to rise 2-3 times. Cover it with a lid or cling film and leave it in a quiet place for 1.5-2 hours. I usually keep the dough in the oven, which is turned off and not hot, just turn on the internal light. This method always works well, and you don’t have to make sure that the kitchen is warm and free of drafts.
After the dough has risen, you can form the garlic dinner rolls.
Sprinkle a little flour on the table, fold the dough with your hands and place it on the table. Next, divide it into 12 equal parts. It is advisable to do this with the help of a kitchen scale, so the pampushky will be of the same weight and size, which means they will bake equally. But it’s okay if there is a difference of a few grams, it’s not critical.
Roll a ball from each part of the dough to make the future pampushky even and rounded on top.
Prepare the baking dish: grease with oil or cover with a sheet of parchment.
You can also bake pampushky on a regular baking sheet, but then they will spread more and bake more strongly around the edges. So it is advisable to use a baking dish in which the donuts are placed fairly close to each other. Then they will turn out tall, moist and fluffy.
Put all the pampushky into the baking dish. Cover with a towel or cling film and leave to rest for 30–40 minutes.
Meanwhile, preheat the oven to 180°C.
Bake the garlic dinner rolls for about 20–25 minutes at 180°C. The exact time depends on your oven. Check if the pampushky are ready with a toothpick: stick it into the dough and take it out, it should come out dry if the buns are ready.
While the pampushky are baking, prepare the garlic sauce.
Mince the garlic cloves with a knife or (preferably) a garlic press. Add finely chopped dill (or parsley), salt, and oil. Mix everything together. The garlic sauce is done.
As soon as you take the pampushky out of the oven, gently pour the garlic sauce over them. They will quickly absorb the oil, rich in garlic and greens flavors, and become even juicier.
Wait until the garlic pampushky have cooled down a bit and enjoy!
