3 tbsp of rice flour
3 tbsp of corn flour
pinch of salt
1 tbsp of cornstarch
1 egg
1 tbsp honey
3 tbsp vegetable oil

  1. Mix the dry ingredients.
  2. Add egg, honey, oil, and a little milk (about 1/3). Mix thoroughly until smooth. At this stage, the mixture should be completely smooth and without lumps.
  3. Gradually add the remaining milk, mixing the mixture thoroughly. Set the batter aside for 20–30 minutes.
  4. Heat a pan. Grease it with a very thin layer of oil, which is convenient to do with a silicone brush. Wait until the pan is well heated.
  5. (!) Before laying the batter on the pan, mix it well, as rice flour quickly settles to the bottom.
  6. Pour the batter onto the pan with a spoon or ladle and turn the pan in circular motions to spread the batter over its bottom in a thin layer. Fry the crepes until golden brown on both sides.
  7. If desired, grease the crepes with butter immediately after baking each one.

Gluten-free crepes can be enjoyed with homemade salted caramel, jams, condensed milk, honey, sour cream, yogurt or various sauces of your choice.
